To a couple of people celebrating birthday the next couple of days, including my beloved mother and Monica’s mother Bela, I leave here a simple and different recipe and I toast to you all, wishing you the best in the years to come.

Polenta Cake
200g of sugar
200g of good quality unsalted butter
200g of polenta
4 eggs
1 teaspoon of baking soda
1 orange
1 lemon

Times New Roman”>Preheat the oven to 180ºC/gas 4 or 5. Line the bottom of a 20 to 25cm 8 or 10 inch tin with greaseproof paper before buttering the bottom and sides. Add the butter and sugar and beat until pale and fluffy. At this point add the eggs one at a time, then mix together the polenta, lemon, orange zest, and the baking powder. I usually cut a little on butter and sugar. Bake for around 40 minutes.

Prepare the syrup using the juice of the orange, juice of half or entire lemon, 50 to 100ml of water and 2 to 4 tablespoons of sugar. Boil until the sugar dissolves and pour this syrup over the cake while still hot and inside the tin.
